Simple Sauce

There is no need to complicate things. Or to over think them.

This past week a friend stopped by with a bag of tomatoes and a few peppers and an onion. Today I realized that they were all still sitting in that bag on the counter and if I didn’t use them they’d all rot.

So a quick chop of the whole lot, an added clove of garlic, a sprinkle of mixed Italian seasonings. Heated some olive oil and done. That’s it. There is no need to overthink or to complicate things.

I added this to some tortellini I had in the freezer and then noticed that there were scallops in the freezer as well. Again no need to overthink.
